The project proposes a study of food as a culture, in an investigation of rural regional cuisine, integral to the food system of a territory of geographical contrasts of landscapes and cultures (Idanha-a-Nova). There, social space, food and culinary practices include traits of long duration, broader social, economic, cultural and political processes, middle builders and the relationship between physical and social spaces. Local reference foods reflect, from production to consumption, structuring processes of significant food facts. Ethnographic, historical and bibliographical research will question some about social differentiation, socio-spatial configuration, values and appropriations of the identity statute and its representations.
